Banana Blueberry Muffin

Wet Ingredients:

3 medium, very ripe bananas

1/2 cup plant milk

1 vegan egg (1 tablespoon chia seeds + 3 tablespoons water, whisk together, set for 5 mins)

1 teaspoon pure vanilla extract

¼ cup maple sirup

Dry Ingredients:

1 ½ cup gluten free oat flour

¾ cup almond meal

2 tsp baking powder

1 tsp salt

Add-ins:

1 cup blueberries

Instructions:

1. Preheat the oven to 350°F (175C).

2. Line a 6-8 cup muffin pan with muffin liners.

3. Add peeled bananas to a large mixing bowl. Mash bananas until smooth. Add the pesto of your wet ingredients: maple syrup, chia egg, and vanilla. Whisk until well incorporated.

4. Combine your dry ingredients: oat flour, almond flour, baking powder and salt. Whisk together until just incorporated, making sure no flour patches remain.

5. Mix the dry and wet ingredients together and fold in your blueberries.

6. Using a large scoop, scoop and drop batter evenly into muffin cups. Smooth batter into an even layer, with a small top.

7. Optional: press blueberries on top of the muffins.

8. Bake for 25-30 minutes.

9. Lift out and enjoy!

 

Norwegian Recipe

Våte ingredienser (6-8 muffins):

3 modne bananer

1 dl plantemelk

1 stk chia egg (1 ss chia frø + 3 ss vann, visp sammen og la stå i 5 min)

1 ts vanilje ekstrakt

0,5 dl lønne sirup

Tørre ingredienser:

3,5 dl glutenfritt havremel. (Lag havremel selv av glutenfrie havregryn I blenderen).

1,7 dl mandelmel.

2 ts bakepulver.

1 ts salt.

Vend inn:

2.5 dl blåbær

Instruksjoner:

1. Sett varmovnen på 180 grader (over og undervarme).

2. Gjør klar 8-10 muffinsformer.

3. Bland sammen de våte ingrediensene: Mos bananene i en bolle og tilsett plantemelk, lønnesirup, chia egget og vaniljeekstrakt. Rør sammen.

4. Bland så sammen de tørre ingrediensene: havremel, mandelmel, bakepulver og salt.

5. Bland sammen de våte og tørre ingrediensene. Vend inn blåbærene til slutt.

6. Fordel røren jevnt i 6-8 muffinsformer.

8. Stek muffinsene i 25-30 minutter.
