Creamy Chanterelle Pasta

The Norwegian autumn equals harvest time! Chanterelle mushrooms grow wild in Norway. Chanterelles have remarkable growth conditions in Norway, as they are exposed to a lot of sunlight during long summer nights. As you maybe know, during summer we have midnight sun and it never gets dark! You voted for the pasta so here it is. The sauce is super healthy as it is low fat and made of vegetables! You must try this one.

English Recipe

Ingredients: (4 servings)

400g dry spaghetti

400g chanterelle mushrooms

Creamy Sauce:

4 medium-sized potato

1 medium-sized carrot

1 onion, chopped

4 medium clove garlic, minced

100g firm tofu

2 cups plant milk

8 tbsps nutritional yeast

2 tbsp soy sauce

2 tbsp lemon juice

2 tsp sea salt

1 tsp of paprika

1 dash of cayenne

1 tsp pepper

Instructions

  1. Chop you potatoes, onions and carrots in small cubes and boil them until tender. This should take 10 minutes.
  2. Get a medium-sized pot and cook your pasta according to package instructions. Set aside.
  3. Place all the ingredients for the sauce in a blender, including the boiled potato, onions and carrots. Blend until smooth.
  4. Sauté your chanterelles in a few tbsp soy sauce.
  5. Combine the pasta, sauce and chanterelles. Enjoy!

 

Norwegian Recipe

Ingredienser (4 porsjoner)

400g spaghetti

400g kantareller

Sausen:

4 medium store poteter

1 medium stor gulrot

1 gul løk

4 hvitløksfedd

100g firm tofu (fås på @rema1000)

5 dl havremelk (@oatly)

8 ss næringsgjær (fås på helsekost)

2 ss soyasaus

2 ss sitronsaft

1-2 ts salt

1 ts paprikapulver

1-2 ts pepper

1 klype cayennepepper

Instruksjoner:

  1. Kutt opp potetene, løken og gulroten i små terninger. Kok opp vann i en medium stor kjele. Når vannet koker tilsetter du potetene, gulroten og løken. La grønnsakene koke i ca. 10 minutter til de er gjennomkokte.
  2. Tilbered pastaen som anvist på pakken.
  3. Ha alle ingrediensene til sausen, inkludert de kokte grønnsakene, i en blender eller kjøkkenmaskin med kniver og kjør til en jevn kremet kantarellsaus. Smak til med krydder.
  4. Varm opp en stekepanne på middels høy varme. Stek kantarellene i en spiseskje  soyasaus og vann i ca. 5-7 minutter. Her kan du også krydre kantarellene med salt og pepper om ønskelig.
  5. Bland så sammen den kremete sausen, kantarellene og pastaen i en stor bolle. Kantarellpastaen er spiseklar!
